Coffee Rub Smoked Meatloaf

Prep 20 minutesCook 1.5 hoursTotal 2 hoursServes 6-8

Ingredients

  • 1 lb ground beef (80/20 for best juiciness)
  • 1 lb ground pork
  • 8 strips bacon, cooked crisp and chopped
  • 2 large eggs, lightly beaten
  • ½ cup Italian panko breadcrumbs
  • ¼ cup whole milk
  • 1 cup sharp cheddar, shredded
  • 3 Tbsp Hazy Midnight (Brown Sugar & Coffee Rub)
  • 2 Tbsp chopped fresh parsley (optional, for color)

Directions

  1. Fire Up the Smoker

    • Preheat your smoker to a steady 325 °F. If you’re feeling wild, toss in a handful of hickory or applewood chips for extra swagger.
  2. Mix the Magic

    • In a roomy bowl, combine ground beef, ground pork, chopped bacon, eggs, breadcrumbs, milk, cheddar, and all the Hazy Midnight rub. Use your hands (yes, get messy) to blend until just combined. Overworking = sad loaf.
  3. Loaf It Up

    • Shape the mixture into a tight loaf about 9″ long and 5″ wide. Place it on a foil-lined rack or grate, fat side up.
  4. Smoke ’til Glorious

    • Slide the loaf into the smoker. Keep it low and slow at 325 °F, smoking until the internal temperature hits 165 °F—roughly 1½ hours.
  5. Rest & Revel

    • Remove the meatloaf and let it rest for 10 minutes under a loose foil tent. This locks in juices and keeps you from crying happy tears all over.
  6. Slice & Serve

    • Garnish with parsley (if using), slice thick, and serve with your favorite sides—mashed potatoes, tangy slaw, or just an unashamed pile of napkins.

Dragons Twilight Glazed Salmon served on rice with green onions and sesame seeds, featuring the Dragons Twilight seasoning bottle.

Dragons Twilight Glazed Salmon

Prep 5 minutesCook 10 minutesTotal 15 minutesServes 4

Ingredients

  • 4 salmon fillets (skin removed, about 6 oz. each)
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup firmly packed brown sugar
  • 1 tsp sesame oil
  • 2 tbsp Flavor Expedition Co. Dragons Twilight seasoning
  • 1 tbsp rice wine vinegar
  • 2 scallions, thinly sliced on the diagonal
  • 1 tsp sesame seeds (toasted if you’re feeling fancy)
  • Optional: cooked jasmine rice or noodles, for serving

Directions

  1. Mix the Magic
In a shallow dish or zip-top bag, whisk together soy sauce, brown sugar, sesame oil, and Dragons Twilight. Place the salmon in the marinade and let it soak up the flavor for 3 minutes. Flip fillets and marinate another 3 minutes. (No need to over-marinate—this rub means business.)

  2. Sear & Sizzle
Heat a large nonstick skillet over medium-high. Add salmon and cook for 2–3 minutes per side, depending on thickness and desired doneness. Remove from skillet and tent loosely with foil.

  3. Make It Saucy
Pour the leftover marinade into the same skillet. Add rice vinegar and stir continuously for about 2 minutes, or until slightly thickened and glossy.

  4. Finish Strong
Drizzle that spicy-sweet glaze over the cooked salmon. Garnish with scallions and sesame seeds. Serve immediately over rice or noodles, spooning extra sauce on top like a flavor boss.

Pro tips

  • Want a citrus twist? Add a splash of orange juice to the marinade.
  • Grilling instead of pan-searing? Brush with glaze near the end of cook time and prepare for applause.

Green Chile Turkey Sloppy Joes

Prep 5 minutesCook 20 minutesTotal 25 minutesServes 4-6

Ingredients

  • 1 lb ground turkey
  • ⅓ cup diced yellow bell pepper
  • ⅓ cup diced red bell pepper
  • ⅓ cup diced red onion
  • 2–3 tablespoons Western Dawn (Green Chile Chipotle)
  • 1½ teaspoons yellow mustard
  • ¾ cup ketchup (look for one without high-fructose corn syrup!)
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • 6 hamburger buns (or whatever carbs you're into—brioche, pretzel buns, even toasted sourdough)

Directions

  1. Brown the turkey
Heat a large skillet over medium-high heat. Add ground turkey, diced onions, and bell peppers.

  2. Sauté
Sauté until turkey is fully cooked and veggies are softened—about 7–10 minutes.

  3. Season
Season generously with Western Dawn, and don’t be shy—this is where the flavor comes alive.

  4. Drain and lower the heat
Drain excess liquid if needed, then reduce heat to low.

  5. Make the sauce
Stir in ketchup, mustard, brown sugar, salt, and pepper. Simmer gently for 5–7 minutes, stirring occasionally until everything melds into saucy perfection.

  6. Serve
Spoon that glorious mess onto buns and serve warm. Napkins highly recommended.

Pro tips

Make it extra by topping with melty pepper jack cheese or crispy fried onions.

Smoked & Saucy: Pineapple Punch Ribs on a wooden cutting board, showcasing juicy, glazed ribs ready to be devoured.

Smoked Pineapple Habanero Pork Ribs

Cook 4.5 hoursTotal ~6 hours (prep and rest time)Serves 3-4

Ingredients

  • 1 rack of pork baby back ribs
  • Flavor Expedition Co. Island Sunrise seasoning (pineapple habanero magic)
  • Robert Rothschild Pineapple Habanero Glaze (Costco MVP)
  • Apple cider vinegar (for spritzing)
  • Your favorite pellet blend (we used Pit Boss Competition Blend)

Directions

  1. Prep those ribs

    • Peel off the silver membrane from the bone-side (trust us—do it).
    • Pat dry like you're tucking them in for a nap.
    • Generously coat with Island Sunrise seasoning on both sides.
    • Let 'em chill (literally) in the fridge for 1 hour to soak in that flavor.
  2. Get your smoker ready

    • Fire up your pellet grill to 225°F.
    • Choose a pellet that complements fruity + smoky vibes (we used Pit Boss Competition Blend).
    • Fill a spray bottle with apple cider vinegar for your rib spritz sessions.
  3. Time to smoke

    • Place ribs bone-side down directly on the grates.
    • Spritz with apple cider vinegar every 45 minutes to keep 'em moist and dreamy.
    • Smoke for about 4.5 hours, until internal temp hits 185–190°F.
  4. Glaze & finish

    • At 185–190°F, brush on that pineapple habanero glaze like you mean it.
    • Crank the smoker up to 250°F and let them go another 30–45 minutes.
    • Pull 'em when they hit an internal temp of 205°F and have that classic bone pullback.
  5. Rest & devour

    • Let the ribs rest 10–20 minutes. (Hardest part, we know.)
    • Slice between the bones and serve hot, sticky, and spicy-sweet.

Pro tips

  • Don’t skip the spritzing — it helps build flavor and keeps the ribs from drying out.
  • No smoker? Use an oven at the same temps with liquid smoke and a baking rack over a foil-lined sheet pan.
  • Leftovers (if any) reheat beautifully in a low oven wrapped in foil.

  3. Sear

  4. Roast
Transfer seared pork to the oven and roast 15–18 minutes, or until internal temperature hits 145°F.

Southwestern Chuckwagon Skillet with ground beef, sweet potatoes, and cheese, cooked in a skillet for a vibrant dinner.

Southwestern Chuckwagon Skillet

Prep 15 minutesCook 25 minutesTotal 40 minutesServes 4

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1 pound lean ground beef
  • 2–3 tablespoons Slow Noon (Chili Lime Basil)
  • 1 teaspoon freshly grated garlic
  • 2 cups peeled and diced sweet potatoes
  • 14.5 oz can fire-roasted diced tomatoes
  • 4 oz canned diced green chiles
  • 1/4 cup water
  • 1/2 cup shredded cheddar cheese
  • Fresh cilantro, for garnish (optional)

Directions

  1. Sizzle & Spice
Heat olive oil in a large skillet over medium-high heat. Add ground beef and diced onion, crumbling beef as it cooks. Sprinkle in Slow Noon and let the aromas take over your kitchen. Add garlic just before the beef finishes cooking and sauté for another minute. Transfer mixture to a plate and wipe skillet clean.

  2. Sweet Potato Fiesta
In the same skillet, combine diced sweet potatoes, fire-roasted tomatoes, green chiles, water, chili powder, cumin, salt, and pepper. Stir, cover, and reduce heat to a gentle simmer. Let it cook for about 20 minutes or until sweet potatoes are tender.

  3. The Grand Reunion
Mix the beef mixture back into the sweet potato medley. Sprinkle shredded cheddar cheese on top, cover for one more minute, and let it melt to cheesy perfection.

  4. Garnish & Serve

  • Pro Tip: Swap sweet potatoes for butternut squash or regular potatoes for a different twist.
  • Make it spicy: Add an extra teaspoon of chili powder if you like more heat.

Sliced tri tip steak covered in Hazy Midnight seasoning.

Reverse Sear Tri Tip

Cook 1.5 hours (plus 15 minutes rest)Total 1 hour 45 minutesServes 4-6

Ingredients

Directions

  1. Get the heat going
Preheat your smoker or grill to 225°F for indirect cooking.

  2. Rub it the right way
Coat the tri tip all over with a bold layer of Hazy Midnight, then follow with a spicy dusting of Scorching Afternoon. Massage it like it owes you money.

  3. Low and slow
Set that glorious hunk of meat directly on the grates. Close the lid and smoke until it’s 5–10°F shy of your desired final temp. (Rare: 115°F, Med-Rare: 125°F, Med: 135°F, Med-Well: 145°F, Well: 150°F.) Pro tip: Medium-rare is the sweet spot. This’ll take about 1.5 hours.

  4. Sizzle time
While the tri tip finishes, get a cast iron skillet screaming hot. Toss in the butter and crushed garlic cloves. Let it bubble like a butter hot tub.

  5. Seariously delicious
Drop the tri tip into the skillet and sear 2–3 minutes per side, spooning garlic butter over the top like it’s your love language.

  6. Rest and slice
Let it chill on a cutting board for 15 minutes, then slice against the grain (it shifts—keep adjusting as you go). Serve it like you’re the host of a meat-forward holiday miracle.

Deliciously sticky Volcanic Peach Smoked Wings glazed with peach preserves and spicy flavor.

Volcanic Peach Smoked Wings

Prep 5 minutesCook 1 hourTotal 1 hourServes 6

Ingredients

5 lbs chicken wings (flats & drumettes)
2 ½ Tbsp baking powder
1 tsp salt

  • SAUCE
    ½ cup peach preserves
    ¼ cup hot sauce
    4 Tbsp butter
    2–3 Tbsp Volcanic Sunset

Directions

  1. Pat that bird dry
Seriously. Get every wing nice and dry with paper towels—it’s the key to crispy skin.

  2. Shake & Bake (kind of)
Toss wings in a zip-top bag with baking powder and salt. Shake it like you’re making maracas.

  3. Smoke 'em slow
Fire up your smoker to 250°F with your wood of choice (we like peach or hickory). Spread wings on the grates and smoke for 30 minutes with the lid shut.

  4. Bring the heat
Crank the smoker up to 425°F. Continue cooking until wings reach 175°F internal temp—flip ‘em as needed for that golden glory.

  5. Sauce time, baby
While wings finish, melt Volcanic Sunset, peach preserves, hot sauce, and butter in a cast iron pan right in the smoker. No cast iron? Simmer gently on the stovetop. Stir until silky.

  6. Toss & devour
Remove wings, drench 'em in sauce, and brace yourself. They're sweet, they're spicy, and they're dangerously addictive.

Smoked BBQ Spatchcock Chicken with seasoning and spices on a rustic wooden background.

Smoked BBQ Spatchcock Chicken

Prep 12-24 hours briningCook 1.5 hoursTotal 24 hours 45 minutes (includes brining)Serves 4-6

Ingredients

Directions

  1. Prep the Brine
Pour 1 cup Bent Barrel Bird Brine into ½ gallon water. Heat until brine dissolves completely, then let cool.

  2. Brine the Chicken
Place chicken in a large stock pot and cover with the cooled brine, adding extra water if needed to submerge fully. Refrigerate 12–24 hours.

  3. Spatchcock the Bird
Remove chicken from brine, rinse, and pat dry. Using kitchen shears, remove the spine. Press down firmly on the breastbone to flatten the bird.

  4. Season
Rub Mellow Dusk generously over the chicken. Let sit at room temperature for 30 minutes.

  5. Cook Low & Slow
Preheat smoker or oven to 250°F. Cook the chicken until the internal temperature reaches 110°F.

  6. Crisp it Up
Increase temperature to 400°F. Optional: brush skin with olive oil for extra crunch. Continue cooking until internal temp hits 160°F, then cover and let rest until 165°F.

  7. Serve
Slice, serve, and watch everyone fight over the drumsticks.

Pro tips

  • Brining: Don’t skip it! Brining locks in juiciness and amps up flavor.
  • Crispy Skin Hack: A light brush of olive oil right before the high-heat finish = golden, crackly skin magic.
  • Smoker vs Oven: You can swap a smoker for a conventional oven; adjust cooking times slightly.

Creamy Baked Tuscan Chicken Breasts topped with herbs and spices in a glass dish next to seasoning jars.

Creamy Baked Tuscan Chicken Breasts

Prep 10 minutesCook 25-30 minutesTotal 35-40 minutesServes 4

Ingredients

  • 2–3 tablespoons Slow Noon (Chili Lime Basil Seasoning)
  • 2–3 tablespoons Tuscan Evening (Herby Italian Seasoning)
  • 3 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • ½ cup heavy whipping cream
  • ½ cup chicken broth
  • 2 teaspoons garlic powder
  • ¼ teaspoon salt
  • ⅓ cup chopped sundried tomatoes (drained of oil)
  • ¼ cup shredded Parmesan cheese (plus more for topping)
  • ½ cup chopped fresh spinach

Directions

  1. Preheat & Prep
Set your oven to 425ºF (225ºC). Flatten the chicken breasts to an even thickness — this ensures they cook evenly and don’t dry out.

  2. Season the Star
Place the chicken breasts in a 9×13″ baking dish (or larger, just make sure they’re not touching). Drizzle with olive oil, then rub generously with a mix of Slow Noon and Tuscan Evening. Sprinkle the sundried tomatoes evenly around the chicken.

  3. Whip Up the Sauce
In a medium bowl, whisk together heavy cream, chicken broth, garlic powder, and salt until smooth. Stir in Parmesan cheese. Pour the sauce around (not on top of) the chicken in the baking dish. If you want extra cheese, now’s the time to sprinkle it.

  4. Bake to Perfection
Slide the dish into the oven and bake for 25–30 minutes, or until the thickest part of the chicken hits 165ºF (74ºC). Larger breasts may need more time.

  5. Spinach Finish
Remove from the oven and stir the fresh spinach into the sauce. Cover and let the dish rest for 5–10 minutes so the spinach wilts and the flavors mingle like old friends.

  6. Serve & Savor
Spoon that creamy, flavor-packed sauce over each chicken breast and serve immediately.

Pro tips

  • Double the Sauce: If you’re a “more sauce” kind of person, double the cream/broth/cheese mixture. You won’t regret it.
  • Make it Spicy: Add a pinch of red pepper flakes for extra sass.
  • Pair it Right: Serve over pasta, rice, or mashed potatoes to soak up every drop.

We tried your recipe for tri-tip enclosed with our order. It was wonderful. Great seasoning Thought it might be a little too spicy but it was delicious!

We have made burgers with Western Dawn...Slow Noon and Dragons Twilight. We made chicken with Hazy midnight...Tuscan Evening and Mellow Dusk. We grilled Argentinian Red's with Slow Noon. We made a filet roast with Island Sunrise. We made Mahi fish tacos Volcanic Sunset. We made deviled eggs with the Crisp Morning. So far they have all been great...but do have our favorites. Hazy midnight on a breaded chicken breast is outstanding. Slow Noon on the shrimp was outstanding. Our best spice purchase ever and as you can see...we cook almost 7nights a week. Excellent product... excellent customer service. Do yourself a favor...give them a try. We did.

I LOVE to cook and experiment with different flavors in the kitchen! TurnEmRed makes that SO incredibly delicious and easy! I’m a native to AZ and moved to TN 4 years ago. It’s hard to find seasoning out here with that smoky, lil slow build heat like TurnEmRed has from day 1! Slow noon is a staple for a lot of my daily cooking because it’s just that good! Not to mention the customer service and shipping time is something to celebrate y’all! Do yourself a favor and try it, you too will be giving your dishes that famous *chef’s kiss*!
