Ingredients
- 2 tbsp sesame oil
- 1 medium onion, diced
- 1 lb ground pork (or a pork/beef mix if you’re wild like that)
- 4 cloves garlic, minced
- 1 tsp fresh grated ginger
- 1 (8 oz) can water chestnuts, chopped
- 1 tbsp rice wine vinegar
- ¼ cup coconut aminos (or soy sauce)
- 1 tbsp hoisin sauce
- 1 tbsp sriracha
- 1 (16 oz) bag coleslaw mix
- ½ cup shredded or matchstick carrots
- Dragons Twilight to taste (start with 1 tsp and crank it if you're brave)
Garnish
- Black sesame seeds
- 4 green onions, thinly sliced
Sriracha Mayo Drizzle
- ¼ cup mayo
- 1–2 tbsp sriracha (depending on your inner dragon)
Instructions
-
Fire it up: Heat sesame oil in a large skillet over medium-high heat. Toss in diced onion and sauté until soft and translucent—about 3-4 minutes.
-
Meat the Heat: Add ground pork (or combo) and cook until browned and no longer pink. Sprinkle in Dragons Twilight and stir. (Drain if it gets too juicy—unless you like your egg rolls soupy.)
-
Flavor Bomb: Stir in garlic, grated ginger, and water chestnuts. Cook for 30 seconds until the kitchen smells amazing.
-
Sauce Party: Add rice wine vinegar, coconut aminos, hoisin, and sriracha. Mix in coleslaw mix and carrots. Stir and cook for another 5–7 minutes, or until cabbage is tender but still a little snappy. Taste and hit it with more Dragons Twilight if you dare.
-
Finish Strong: Remove from heat. Top with green onions and sesame seeds. Drizzle with sriracha mayo like you’re Jackson Pollock in a spicy mood.
-
Serve it Up: Bowl it up, grab a fork (or chopsticks if you're feelin' fancy), and dig in.
