Why Bird is the Word Exists

We strongly recommend brining your poultry in a food safe container for a minimum of 1 hour per pound though doing it overnight is the most convenient. Make sure to completely rinse your poultry after brining and pat completely dry before adding Mellow Dusk.

Mixing Instructions:

Chicken: Mix 1 cup of brine with 1/2 gallon of water, chicken stock, chicken broth or your choice of liquid.
Turkey: Mix entire contents of the package with 1 gallon of water or enough to completely submerse your turkey.
Optional - You can warm the mixture in a sauce pan to help dissolve the contents. Make sure you chill the mixture completely before submersing poultry.

When do I brine? Brine your poultry in a food safe container for at least 1 hour per pound. Overnight is the most convenient.

How do I mix it? Chicken: mix 1 cup of brine with 1/2 gallon of water, chicken stock or broth. Turkey: mix the entire package with 1 gallon of water, or enough to completely cover the bird. You can warm the mixture to help it dissolve, but chill it completely before the poultry goes in.

What about Mellow Dusk? After brining, rinse the bird completely and pat it dry. Then finish it with Mellow Dusk for sweet, smoky hickory and honey.

How hot is it? Neither one is hot. Both rate 1 out of 5 on our heat scale, and the brine is mostly aromatics: garlic, citrus, sage, rosemary, thyme, peppercorn, allspice and clove.

Allergen heads-up. Both are gluten free and vegetarian. The brine is also vegan and contains mustard. Mellow Dusk contains honey.

Best ever bird.

Used Bent Barrel Bird Brine on this years bird. Overnight brining and then on the Treager until 165. About 4 hours. Not only the best turkey I’ve ever made but the best turkey I’ve ever had.
