Four orange dietary seals: low sodium, no fillers, gluten-free, and no MSG.

Hazy Midnight – Our Brown Sugar & Coffee Rub is a bold, slow-burning blend crafted for cooks who appreciate deep flavor that develops as it cooks. This rub begins with rich brown sugar, which melts and caramelizes under heat to create a beautifully dark crust that locks in moisture and builds irresistible texture. Ground coffee adds roasted bitterness and complexity, enhancing savory notes without overwhelming the dish or tasting overtly “coffee-forward.”

Paprika and ancho chile powder bring gentle warmth and subtle smokiness, while garlic salt, granulated onion, black pepper, and cumin round out the savory backbone. As the cook progresses, the sweetness tightens, the spices bloom, and the coffee deepens, creating a layered flavor profile that evolves from first bite to finish.

Hazy Midnight truly shines on low-and-slow cooks like brisket, pork shoulder, ribs, and chuck roast, where time allows the flavors to fully integrate. It also performs exceptionally well on steaks, burgers, and chicken when you want a bold sear and a dark, flavorful crust. The balance of sweet, savory, and bitter makes this rub surprisingly versatile across proteins.

This is a seasoning built for late nights, steady smoke, and patient cooks. Hazy Midnight doesn’t rush flavor — it earns it, delivering depth, richness, and a finish that lingers long after the plate is clean.

The first impression is dark and smooth — molasses-like sweetness from turbinado sugar, immediately grounded by roasted coffee. As it cooks, the sweetness tightens, the coffee deepens, and savory notes of garlic, onion, cumin, and black pepper rise to the surface. Ancho chile adds warmth without sharp heat, keeping the profile rich and controlled.

The result is bold, smoky-sweet flavor with just enough edge to stay complex.

Hazy Midnight shines when heat and time do their thing:

  • Brisket, pork shoulder, ribs, and pulled pork
  • Steaks and burgers with a hard sear
  • Grilled or roasted vegetables
  • Anything that benefits from crust, bark, or caramelization

Use it as a dry rub, layer it with heat-forward blends, or let it stand alone for a deep, smoky finish.

Smoky • Sweet • Roasted • Savory • No Heat

Turn the lights low. Let it ride.

Every Flavor Expedition blend is built to perform. No fillers. No shortcuts. Just intentional layering that works on the grill, in the smoker, or on cast iron.

Hazy Midnight isn’t about sweetness for sweetness’ sake. It’s about balance — where sugar caramelizes, coffee deepens, and spice keeps everything in check.

This is the flavor you reach for when the cook runs late and the payoff needs to be worth it.
