4 pork chops, at least 1 inch thick

1 large apple (or 2 small apples), diced
Step-by-Step Instructions:

Preheat & Prep: Preheat your oven to 425°F. Line a large sheet pan with parchment paper or aluminum foil for easy cleanup.

Roast Sweet Potatoes: Spread the diced sweet potatoes evenly on the sheet pan. Drizzle with olive oil, sprinkle with salt and pepper, and toss until coated. Roast for 15 minutes.

Season Pork Chops: While the sweet potatoes roast, rub both sides of each pork chop generously with Scorching Afternoon seasoning for a bold, spicy kick.

Add Pork & Apples: After the first 15 minutes, push the sweet potatoes to one side of the pan. Place the pork chops on the other side. Toss the diced apples with Mellow Dusk and add them to the sweet potatoes.

Finish Roasting: Roast for an additional 12–15 minutes, or until sweet potatoes are tender and pork chops reach an internal temperature just below 145°F (carryover cooking will bring them perfectly to temp). Adjust cook time for thicker chops.
