Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1 pound lean ground beef
  • 1–2 tablespoons Crisp Morning (Apple Jalapeño) seasoning, divided
  • 1 teaspoon grated garlic
  • 2 cups peeled and diced sweet potatoes
  • 14.5 oz can fire-roasted diced tomatoes
  • 4 oz canned diced green chiles
  • 1/4 cup water
  • 1/2 cup shredded cheddar cheese
  • Cilantro or green onions for garnish (optional)

Instructions

  1. Sizzle the Beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and diced onion. Crumble and cook until the beef is nearly done. Sprinkle in 1 tablespoon Crisp Morning for that sweet-and-spicy kick.

  2. Add Garlic: Stir in garlic, cooking for an extra minute to wake up the flavors. Remove beef mixture to a plate and wipe the skillet clean.

  3. Cook the Veggies: In the same skillet, add diced sweet potatoes, fire-roasted tomatoes, green chiles, water, and an extra sprinkle of Crisp Morning. Mix well, cover, and simmer on low heat for 20 minutes, or until sweet potatoes are tender.

  4. Bring It Together: Return the beef mixture to the skillet. Stir everything together until well combined.

  5. Cheesy Finish: Sprinkle shredded cheddar over the skillet. Cover for 1–2 minutes or until cheese melts into gooey perfection.
