Ingredients:

  • 1½ Tbsp. coconut oil, divided (or cooking fat of choice – avocado oil or ghee)

  • 1 medium onion, diced

  • 1 small butternut squash (1½ lbs.), peeled and cut into ¼-inch dice (about 3 cups)

  • 1 medium apple, cored and diced

  • 12 ounces ground turkey, chicken, or pork (93% lean or leaner)

  • 2-3 Tbsp. Crisp Morning (Apple Jalapeño)

  • ½ tsp. fine salt (plus more to taste)

  • 3 cups kale, chard, or spinach, washed and torn

  • Optional: shredded cheese for topping


Instructions:

  1. Prep the sausage mix: In a small bowl, combine ground turkey (or your chosen protein) with Crisp Morning and salt. Mix well with a spoon or your hands until evenly seasoned. Set aside.

  2. Cook the veggies: Heat 1 tsp. coconut oil in a large skillet over medium-high heat until it shimmers. Add diced onion and butternut squash. Sauté for 7-8 minutes, stirring occasionally, until the squash starts to soften.

  3. Add a fruity twist: Pour in 3 Tbsp. water and diced apple. Cook for another 5 minutes, stirring occasionally, until apples are tender but still hold their shape.

  4. Cook the sausage: Push the veggie mixture to one side of the skillet. Add the remaining coconut oil and the seasoned turkey mixture. Let it cook for a few minutes, then break it up with a spatula or wooden spoon. Cook 5-6 minutes until meat is no longer pink. Drain excess liquid if necessary.

  5. Combine & finish: Stir vegetables and sausage together. Layer greens on top, cover with a lid, and let wilt for 1-2 minutes. Stir, season with additional salt and pepper, and serve.

  6. Optional cheesy finish: Sprinkle shredded cheese and extra Crisp Morning on top, then bake in a preheated oven at 350°F for 12-15 minutes for a melty, indulgent twist.
