Dragons Breath Chicken Bowls with Hoisin Sweet Potato

  1. Prep the chicken. Rub down your chicken breasts with avocado oil and sprinkle generously with Dragons Twilight Seasoning. (Don’t be shy—this is where the fire lives.)

  2. Sear it hot. Heat a drizzle of oil in a pan over medium-high heat. Cook chicken a few minutes per side until golden and it reaches 165°F. Remove from pan and let it rest.

  3. Crank up the oven. Adjust rack to the top position and preheat to 425°F.

  4. Chop it like it’s hot. Slice scallions (keep whites and greens separate), mince ginger, dice sweet potatoes into ½-inch cubes, and dice bell peppers.

  5. Rice time. Melt butter in a small pot over medium-high heat. Add scallion whites and ginger; cook until fragrant, about 1 minute. Stir in rice, 2¼ cups water, and a pinch of salt. Bring to a boil, then cover and simmer 15–18 minutes. Keep covered off heat until ready to serve.

  6. Roast the veggies. Toss sweet potatoes with oil, half the hoisin, salt, and pepper. Spread on a baking sheet and roast for 15–20 minutes until tender. Add bell peppers halfway through if you like them softer.

  7. Mix the sauce. In a small bowl, stir together mayo, sour cream, coconut aminos, and sriracha (to taste—though let’s be honest, you’ll go heavy).

  8. Assemble the bowl. Fluff the rice with a fork and season with salt. Pile on the roasted sweet potatoes, bell peppers, and sliced chicken. Drizzle with sriracha mayo, then finish with scallion greens and sesame seeds.
