Ingredients

  • 3 large sweet potatoes, peeled and diced into bite-sized pieces
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper, to taste
  • 1–2 tablespoons Scorching Afternoon seasoning
  • 1–2 tablespoons Mellow Dusk seasoning
  • 4 pork chops, at least 1 inch thick
  • 1 large apple (or 2 small apples), diced

Instructions

  1. Preheat & Prep: Preheat your oven to 425°F. Line a large sheet pan with parchment paper or aluminum foil for easy cleanup.

  2. Roast Sweet Potatoes: Spread the diced sweet potatoes evenly on the sheet pan. Drizzle with olive oil, sprinkle with salt and pepper, and toss until coated. Roast for 15 minutes.

  3. Season Pork Chops: While the sweet potatoes roast, rub both sides of each pork chop generously with Scorching Afternoon seasoning for a bold, spicy kick.

  4. Add Pork & Apples: After the first 15 minutes, push the sweet potatoes to one side of the pan. Place the pork chops on the other side. Toss the diced apples with Mellow Dusk and add them to the sweet potatoes.

  5. Finish Roasting: Roast for an additional 12–15 minutes, or until sweet potatoes are tender and pork chops reach an internal temperature just below 145°F (carryover cooking will bring them perfectly to temp). Adjust cook time for thicker chops.

  6. Rest & Serve: Let pork chops rest 3–5 minutes before slicing. Plate with roasted sweet potatoes and apples for a perfectly balanced sweet-and-spicy sheet pan meal.

Fast, fiery, and ridiculously tasty, this sheet pan meal proves weeknight dinners don’t have to be boring—or full of dishes. Sweet, spicy, and perfectly roasted, your taste buds will throw a little party.

Pro Tip

  • Want extra heat? Add a dash of Scorching Afternoon to the apples as they roast.
  • Mix up the seasoning! Try Crisp Morning for a milder, fruity twist, or Slow Noon if your spice tolerance needs a break.
  • This recipe works beautifully with chicken thighs or drumsticks if you prefer poultry.
