Feeds: 4 people
Cook Time: 30 minutes
Total Time: 45 minutes
Cook Temp: Stovetop medium heat
Servings: 4
Ingredients:
-
1 tablespoon olive oil
-
1/2 cup diced onion
-
1 pound lean ground beef
-
1–2 tablespoons Crisp Morning (Apple Jalapeño) seasoning, divided
-
1 teaspoon grated garlic
-
2 cups peeled and diced sweet potatoes
-
14.5 oz can fire-roasted diced tomatoes
-
4 oz canned diced green chiles
-
1/4 cup water
-
1/2 cup shredded cheddar cheese
-
Cilantro or green onions for garnish (optional)
Instructions:
-
Sizzle the Beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and diced onion. Crumble and cook until the beef is nearly done. Sprinkle in 1 tablespoon Crisp Morning for that sweet-and-spicy kick.
-
Add Garlic: Stir in garlic, cooking for an extra minute to wake up the flavors. Remove beef mixture to a plate and wipe the skillet clean.
-
Cook the Veggies: In the same skillet, add diced sweet potatoes, fire-roasted tomatoes, green chiles, water, and an extra sprinkle of Crisp Morning. Mix well, cover, and simmer on low heat for 20 minutes, or until sweet potatoes are tender.
-
Bring It Together: Return the beef mixture to the skillet. Stir everything together until well combined.
-
Cheesy Finish: Sprinkle shredded cheddar over the skillet. Cover for 1–2 minutes or until cheese melts into gooey perfection.
-
Garnish & Serve: Top with cilantro or green onions, and if you’re feeling extra cheesy, sprinkle more Crisp Morning on top.
Tips & Notes:
-
For extra heat, add a pinch of cayenne along with Crisp Morning.
-
Swap ground beef for turkey or chicken for a lighter twist.
-
Sweet potatoes don’t need peeling if you prefer a rustic texture—just scrub well.
