2. Preheat oven:

350°F. Grease a 9×9-inch baking dish generously with butter or oil. For double batches, use 9×13 or 10×15.
3. Cook the veggies:

In a large sauté pan over medium heat, melt ¾ cup butter.

Add onions and celery, sauté until softened (~20 minutes).
4. Season it up:

Remove pan from heat.
