Ingredients

  • 5–6 medium sweet potatoes, peeled & cut into thin medallions
  • ¼ cup unsalted butter
  • ¼ cup light or dark brown sugar
  • ½ cup water
  • 1 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground nutmeg
  • ¼ tsp salt
  • ¼ cup chopped pecans or walnuts
  • ¾ cup mini marshmallows
  • Mellow Dusk (Hickory Honey BBQ) – to taste

Instructions

  1. Prep the oven & potatoes: Preheat oven to 400°F. Peel sweet potatoes and slice into thin medallions. Arrange them neatly in a shallow casserole or pie dish.

  2. Make the magic glaze: In a small to medium saucepan over medium heat, melt together butter, brown sugar, water, cinnamon, cloves, nutmeg, and salt until smooth and bubbling.

  3. First coat of deliciousness: Brush ¾ of the glaze over the sweet potato medallions. Cover the dish with foil and bake for 45–50 minutes, until potatoes are tender.

  4. Top it like a pro: Remove foil. Spoon the remaining ¼ of the glaze over the potatoes. Sprinkle with chopped pecans, mini marshmallows, and a light dusting of Mellow Dusk to add that smoky-sweet magic.

  5. Broil for that golden finish: Switch oven to broil. Place the dish under the broiler for 1–2 minutes to toast the marshmallows. Watch carefully—this happens fast!

  6. Rest & serve: Let the dish cool 10–15 minutes before serving. Grab a plate, scoop generously, and enjoy the sweet, buttery, smoky goodness.

These scalloped sweet potatoes are perfect for fall gatherings, holiday dinners, or anytime you want a sweet-and-savory treat that’ll have everyone begging for your secret.
