Prep the chicken
Rub down your chicken breasts with avocado oil and sprinkle generously with Dragons Twilight Seasoning. (Don’t be shy—this is where the fire lives.) -
Sear it hot
Heat a drizzle of oil in a pan over medium-high heat. Cook chicken a few minutes per side until golden and it reaches 165°F. Remove from pan and let it rest. -
Crank up the oven
Adjust rack to the top position and preheat to 425°F. -
Chop it like it’s hot
Slice scallions (keep whites and greens separate), mince ginger, dice sweet potatoes into ½-inch cubes, and dice bell peppers. -
Rice time
Melt butter in a small pot over medium-high heat. Add scallion whites and ginger; cook until fragrant, about 1 minute. Stir in rice, 2¼ cups water, and a pinch of salt. Bring to a boil, then cover and simmer 15–18 minutes. Keep covered off heat until ready to serve. -
Roast the veggies
Toss sweet potatoes with oil, half the hoisin, salt, and pepper. Spread on a baking sheet and roast for 15–20 minutes until tender. Add bell peppers halfway through if you like them softer. -
Mix the sauce
In a small bowl, stir together mayo, sour cream, coconut aminos, and sriracha (to taste—though let’s be honest, you’ll go heavy). -
Assemble the bowl
Fluff the rice with a fork and season with salt. Pile on the roasted sweet potatoes, bell peppers, and sliced chicken. Drizzle with sriracha mayo, then finish with scallion greens and sesame seeds.
