Bacon Wrapped Ribs
INGREDIENTS
1-2 racks of ribs
1 package bacon
FEC Western Dawn (or your favorite FEC flavor)
Favorite BBQ Sauce
Feta cheese and green onion to garnish
INSTRUCTIONS
Prep ribs by removing the membrane and patting dry.
Separate the ribs by cutting in-between each one and set aside.
Wrap each rib with a piece of thick cut bacon using toothpicks to hold the bacon in place.
Next, season liberally with whichever flavor you like, we went with our Western Dawn.
Let them sit and absorb the seasoning while you get the smoker going.
We want to start low and slow on this so 225 degrees is what we will go with.
Once the smoker is up to 225 degrees, place them in perpendicular to the grill grates. Let them go until they hit 170 degrees internal temp.
Once the temperature hits 170 degrees, it's time to cover them in your favorite BBQ sauce.
Once covered, turn the smoker to 400 and let the ribs go until they hit 195-200 internal. This should go fairly quickly and with the higher heat you will get the bacon to crisp up and the sauce to become sticky.
Take them inside and garnish however you wish.
We chose some feta cheese and green onions for these because those flavors work beautifully with all this porky goodness!
Make sure you remove those toothpicks and enjoy!
