Broccolini, Sausage and Lemon Deep-Dish Pizza Recipe

INGREDIENTS
2 Tbsp extra-virgin olive oil, plus more for drizzling
1 lb pizza dough, at room temperature
2 cloves garlic, thinly sliced
8 oz fresh mozzarella, roughly torn
1/3 cup whole-milk ricotta
Grated zest of 1 lemon
4 oz broccolini, cut into ½-inch pieces
Kosher salt, to taste
4 oz Italian pork sausage
Freshly grated Parmesan, to taste
Tuscan Evening, to taste
Additional Crushed Red Pepper, to taste (optional)

Marinara Sauce (optional)
1 can organic tomato sauce
2-3 tablespoons Tuscan Evening
(mix together)

INSTRUCTIONS
1. Preheat oven to 450°F.

2. Swirl oil around bottom and sides of a 12-inch cast-iron skillet or 10-inch round cake pan. Add dough, patting it so it covers bottom and comes up about an inch on sides. Scatter with garlic, mozzarella, dollops of ricotta and zest all the way to the edge.

3. In a small bowl, toss broccolini with a drizzle of oil to coat; scatter over pizza. Season with a good pinch of salt. Top pizza with small pinches of sausage. Bake 20 minutes or until cheese is splotchy; begin checking for doneness at 20 minutes. Shower with Parmesan and a couple of pinches of crushed red pepper along with a good amount of Tuscan Evening. Run a knife or offset spatula round edge; use a spatula to transfer pizza to a cutting board. If desired, serve with marinara for dunking or drizzling.
