Guinness Irish Stew

At Flavor Expedition Co., we love celebrating St. Patrick's Day! It's just the Irish in us... Try out this recipe for your St. Patrick's Day party this year featuring Hazy Midnight. 

3 Tablespoons olive oil
3 pounds beef chunk roast
1 large onion
4 gloves garlic
1/4 cup flour
1 bottle Guinness beer
4 cup beef stock
2 carrots
2 parsnips
1 pound potatoes
3 tablespoons tomato paste
2 teaspoons Worcestershire sauce
Hazy Midnight
1 teaspoon dried thyme

Prepare the vegetables by peeling and cutting into bite sized pieces.
Trim the excess fat from the beef and cut into chunks. Cover the beef with Hazy Midnight. 
Heat 1 tablespoon olive oil into a pan and sear the beef until brown. Set aside for now.
Add another tablespoon of olive oil and sauté the onion and garlic.
Stir in the flour and cook for 1 minute, stirring frequently.
Pour in the beer, beef stock, vegetables, tomato paste, thyme, Worcestershire and the cooked beef.
Stir, cover and let simmer for about an hour and a half or until everything is cooked thoroughly.
Serve warm and sprinkle with fresh parsley if desired!
