Ingredients

  • 6–8 cups stale white bread, cut into 1-inch cubes

  • ¾ cup plus 2 tablespoons butter, divided

  • 1 large yellow or white onion, chopped

  • 2 cups celery, chopped (include leaves for extra flavor!)

  • 1½ teaspoons kosher salt

  • 1 teaspoon black pepper

  • 1 teaspoon poultry seasoning

  • 2–3 tablespoons Tuscan Evening seasoning from Flavor Expedition Co.

  • 2 large eggs

  • 1 cup chicken broth or stock


Instructions

1. Prep the bread:

  • Cut bread into 1-inch cubes.

  • Make it stale with one of two methods:

    • Overnight: Spread cubes on a sheet pan at room temp overnight.

    • Quick method: Preheat oven to 250°F, spread cubes on a sheet pan, bake 30 minutes, tossing every 5–10 minutes.

2. Preheat oven:

  • 350°F. Grease a 9×9-inch baking dish generously with butter or oil. For double batches, use 9×13 or 10×15.

3. Cook the veggies:

  • In a large sauté pan over medium heat, melt ¾ cup butter.

  • Add onions and celery, sauté until softened (~20 minutes).

4. Season it up:

  • Remove pan from heat.

  • Add salt, pepper, poultry seasoning, and a generous dose of Tuscan Evening.

5. Mix eggs and broth:

  • In a small bowl, whisk together eggs and chicken broth.

6. Combine stuffing:

  • In a large bowl, toss bread cubes with the onion/herb mixture.

  • Pour egg mixture over bread and stir until absorbed.

7. Bake it:

  • Transfer mixture to prepared baking dish.

  • Dot top with remaining 2 tablespoons butter.

  • Cover with foil and bake 30 minutes.

  • Remove foil and bake 15 more minutes.

  • Optional: Broil 1–2 minutes for a crispy golden top.

8. Serve and savor:

  • Scoop out generous portions and watch your guests fight over the last bite.
