If you love egg rolls, but hate that they’re high in calories, wrapped in dough and deep fried then you gotta try this low carb Egg Roll in a Bowl recipe! It’s healthy and delicious, plus I made it extra special by adding in some Dragons Twilight.
INGREDIENTS
2 tablespoon sesame oil
1 medium onion, diced
1 lb. ground pork (I used ground pork/ground beef combination)
4 cloves garlic, minced
1 teaspoon grated ginger
8 oz water chestnuts, chopped
1 tablespoon rice wine vinegar
¼ cup coconut aminos (or soy sauce)
1 tablespoon hoisin sauce
1 tablespoon sriracha
1 16 ounce bag coleslaw mix
½ cup grated or “matchstick” carrots
Dragons Twilight to taste
GARNISH
Black sesame seeds
4 green onions, thinly sliced
SRIRACHA MAYO
¼ cup mayo
1-2 tablespoons sriracha
INSTRUCTIONS
Heat sesame oil in a large skillet over medium-high heat. Add the diced onion and cook until translucent. Add ground meat and cook, stirring, until no longer pink. Sprinkle in Dragons Twilight. Drain if it’s too liquid.
Add garlic, ginger, chestnuts, and cook for 30 seconds until fragrant. Add rice wine vinegar, coconut aminos, hoisin sauce, sriracha sauce, coleslaw mix, and carrots to the skillet. Season with additional Dragons Twilight if desired. Cook, stirring, for about 5-7 more minutes, or until cabbage is wilted.
Remove the skillet from the heat.
Sprinkle green onions and sesame seeds. Drizzle sriracha mayo on top and serve warm in a bowl.
SRIRACHA MAYO
Mix ingredients in a bowl until well combined.
