How many licks does it take to get to the center of a.... chicken lollipop?! Let's find out!
INGREDIENTS
2-3lbs Chicken Drumsticks
2 tbsp olive oil
Crisp Morning
Sweet Baby Ray's BBQ Sauce (or your favorite)
INSTRUCTIONS
1. Start by making a cut about 1/3 of the way down the drumstick towards the knuckle side.
2. Slice all around the drumstick and pull off the excess meat/skin until the bone is the only thing showing.
3. Trim off any excess tendons, then press the meat down to form your "lollipop."
4. Wrap a little bit of foil over the bones to prevent burning if you'd like.
5. Repeat this step for the rests of the drumsticks.
6. Coat the meat with Crisp Morning on each drumstick.
7. Assemble drumsticks on smoker rack and set aside.
8. Preheat the smoker for 275 degrees indirect.
9. Add the chicken to the smoker and cook for about 2-2.5 hours until they reach 175 degrees.
10. Once cooked all the way through, remove from the smoker and carefully dip each lollipop into the barbeque sauce until it is evenly coated.
11. Let the excess glaze drain off and place the chicken back on the smoker rack.
12. Repeat for each lollipop and cook for an additional 5 minutes.
13. When chicken is done, pull off and rest for 2-3 minutes then enjoy!
