Caesar Salad French Bread Pizza

When your husband eats your leftover, you know you did well! This Molly Yeh inspired recipe gave a unique twist to French bread pizza with adding the Caesar salad on TOP of the pizza. Plus, it's easy for a busy weeknight! WINNING!

PROVISIONS
1 French bread loaf
2 tablespoons olive oil
4 garlic cloves, finely chopped
1/2 cup tomato sauce
2 tablespoons Tuscan Evening
2 cups shredded mozzarella cheese
A few handfuls of chopped grilled chicken
9 oz. romaine lettuce, chopped
Caesar dressing (store bought or if you're feeling frisky, make your own)
Grated Parmesan 

PREP
1. Preheat the oven to 425 degrees. 
2. Slice the French bread in half lengthwise (try to keep from cutting through all the way on one long end so you can open it up in one big piece) and place cut side up on a sheet pan. 
3. Brush the innards with the olive oil and sprinkle evenly all over with the garlic. Mix the Tuscan Evening into the tomato sauce then spread the sauce and cover with the mozzarella. 
4. Top with chicken and bake until the cheese is melted and the edges are toasty; begin checking for doneness at 10 minutes. 
5. Meanwhile, in a large bowl, toss the romaine with dressing to taste. 
6. Cut the pizza into 4 big pieces crosswise (they will create 4 big sandwiches), then top with the salad and Parmesan. Fold over, smash and enjoy!
