Taken from the Southern Heritage Vegetables Cookbook, I gave these Fluffy Sweet Potatoes in Orange Shells a smoky, sweet twist with our Mellow Dusk seasoning.
INGREDIENTS
8 small oranges
5 medium-size sweet potatoes, boiled, peeled and mashed (about 4 cups)
1/2 cup milk
1/4 cup firmly packed brown sugar
3 tablespoons honey
2 tablespoons butter, softened
2-3 tablespoons Mellow Dusk (plus more for topping)
1/3 cup finely chopped pecans
INSTRUCTIONS
1. Cut a thin slice from bottom of each orange so that it will sit flat. Cut a 1-inch slice from top of oranges. Gently remove pulp, leaving shells intact. Scallop edges and set aside.
2. Combine hot potatoes, milk, sugar, honey, butter, and Mellow Dusk; mix well. Spoon mixture into prepared orange cups; sprinkle with pecans and extra Mellow Dusk. Bake at 325 degrees for 10 minutes.
3. Enjoy!
