Chicken Kebobs featuring Mellow Dusk
INGREDIENTS
3-4 boneless, skinless chicken breasts, cut into 1 inch chunks
1/2 half pineapple, cut into chunks
1 red pepper, cut into large pieces
1 poblano pepper, cut into large pieces
1/2 half onion, cut into chunks
Mellow Dusk
Metal or wooden skewers*
INSTRUCTIONS
Follow pellet grill instructions to preheat grill to 225 degrees.
Place cut chicken into Ziploc bag and cover with Mellow Dusk. Let sit in the fridge for a few hours to marinate.
*If you're using wooden skewers, you'll want to soak in water for at least 30 minutes prior to using.
Assemble chicken, pineapple, peppers and onions in any order you prefer on the skewers. Sprinkle a coating of Mellow Dusk onto the assembled skewers.
Grill the kebobs for 30-40 minutes until just under 165 degrees. Once the chicken hits 160 degrees, place directly on the flame for a minute on each side to get them a nice char.
Pair with rice or any side of your choosing. Enjoy!
