Summer heat getting you down? Give these easy Chicken-Cucumber gyros a try; you won't even have to turn on the oven!
INGREDIENTS
1.5 lbs boneless, skinless chicken breasts, cut into 1/2 inch cubes
1 medium cucumber, seeded and chopped
1 medium tomato, chopped
1/4 cup finely chopped onion
5-6 whole wheat pitas, warmed
1/3 cup crumbled feta cheese
Marinade
1/2 cup olive oil
2 tbsp lemon juice
3 tbsp Tuscan Evening
Sauce
1/2 cup fat-free plain Greek yogurt
2 tbsp lemon juice
1 tsp dill weed
1/2 tsp garlic powder
INSTRUCTIONS
1. Combine olive oil, lemon juice and Tuscan Evening to create a marinade. Place chicken in a shallow dish and pour over the marinade. Cover and refrigerate up to 6 hours.
2. Drain chicken, discarding the marinade. Heat a nonstick skillet over medium-heat (cast iron preferred) and add the chicken. Stir 4-6 minutes or until chicken reaches 165F.
3. In a small bowl, mix sauce ingredients. In another bowl, combine cucumber, tomato and onion. Sprinkle on some more Tuscan Evening if you'd like! Serve chicken on pita with sauce, vegetable mixture and cheese. Enjoy!
