Love Reubens but they fill you up too much and you have no room left for beer? This St. Patrick's Day, make Reuben in a Bowl instead! It's low carb and keto friendly.
PROVISIONS
One bag of coleslaw mix
1 pound of corned beef cut into strips*
Hazy Midnight
1 cup sauerkraut
2-3 tbsp of butter
Swiss cheese
Scallions (optional)
Russian Dressing:
1 cup mayonnaise
1/4 cup sugar free ketchup
4 tsp horseradish
1 tsp hot sauce
1 tsp Worcestershire sauce
1/2 teaspoon salt
Pinch of pepper
PREP
1. Melt butter in skillet.
2. Add corned beef and Hazy Midnight then saute covered for 5 minutes.
3. Now, add coleslaw and sauerkraut, cover and cook for 5 minutes.
4. Stir coleslaw and corned beef and top with cheese. You can cover skillet and allow the cheese to melt or put in the oven and broil until cheese is bubbly.
5. Drizzle with dressing and top with scallions.
*If cooking your own corned beef, sprinkle with Hazy Midnight before adding corned beef seasoning.
