Make Rice Great Again! Rice is boring. Spicy Pineapple Fried Rice is not. The next time you're looking for a delicious rice side dish, you must make this recipe! Some spice, lots of flavor.
INGREDIENTS
2 tbsp olive oil
1 tsp garlic, minced
1 tsp ginger, minced
1/2 cup onion, Chopped
1/2 cup carrot, Chopped
1/2 cup red bell pepper, Chopped
1/2 cup green peas
1 1/2 cup pineapple, chopped, Chopped
1 tbsp soy sauce
1 tbsp vinegar
1 tsp ground white pepper
Island Sunrise to taste
4 cups cooked jasmine rice
1/4 cup green onions, chopped
INSTRUCTIONS
1. Make the Rice
Add 2 cups dry rice to saucepan or rice cooker
Add 4 cups of water
Cook until rice is cooked through and all water is absorbed into rice
2. Heat a large skillet on a medium heat. Add olive oil, ginger, garlic; sauté for a minute.
3. Add the onion and cook till the onions turn translucent. Add in the carrots and bell peppers. Cook for 3-4 minutes , add the green peas and pineapple. Cook for 2 more minutes.
4. Add the soy sauce, vinegar, white pepper, salt. Mix it.
5. Add the cooked rice and toss them until well combined.
6. Sprinkle with Island Sunrise, measure with your heart*
7. Finally, add the green onions and transfer them to a plate and serve while it is still warm.
*It will get spicier if you leave in the fridge for leftovers
