Spicy Mexican Corn Ribs

Looking for a different way to cook up the corn sitting in your fridge? What if I told you that you can make RIBS from corn?! Let me show you how:

INGREDIENTS
2 ears of corn, husked
1/4 cup crumbled cotija cheese
1/4 cup chopped red onion
Fresh parsley for topping (optional)
Olive oil to coat
White Queso to dip
Scorching Afternoon

INSTRUCTIONS
1. Preheat air fryer to 400 degrees.
2. Heat corn in the microwave for 2 minutes to make it easier to cut.
3. Cut corn in half long ways, cut those in half then half again to make quarter pieces.
4. Place corn in a bowl and cover in olive oil. Dust with Scorching Afternoon and toss to make sure all of the corn is evenly covered.
5. Pop in the air fryer for 12 minutes until golden brown.
6. Top with cotija cheese, red onion and parsley.
7. Dip in queso and enjoy!
